Two Cheese Shredded Kale Salad

The days are getting shorter and I have no natural light to shoot food with so bear with me.  I found some inspiration at Oh She Glows with a shredded kale salad.

Ingredients:
3 cups of finely chopped kale (de-stemmed)
1/4 cup olive oil
juice from one lemon and zest
pinch of sea salt
1 tsp pepper
1 chopped clove of garlic
1/2 chopped pecans (I used the sweet and spicy ones from Trader Joe's)
1/2 cup grated Parmesan cheese
1/2 cup dried cranberries
1/4 cup Gorgonzola

In a large bowl, combine kale, cranberries, cheeses, and pecans.  In a small bowl, combine oil, lemon juice, salt/pepper, and clove of garlic.  Combine the dressing with the greens and toss thoroughly.  Let sit for 30 minutes to an hour and enjoy!
