I wanted something more substantial to hold me over from ice skating and the terrible things I do to myself at the gym.
1/2 lb whole wheat pasta cooked for 8 minutes
sauce: mix together in a bowl
2 cups low sodium broth
2 TBS. whole wheat flour
1/2 cup milk
2 TBS butter, melted
Heat over medium high for 25 minutes, sauce will thicken
1/3 cup Gorgonzola cheese
1/3 cup Parmesan cheese
1/3 cup mozzarella cheese
Toss in a large bowl with the pasta (or the crock pot ceramic insert) and add in:
1 lb. kale (washed and chopped)
1 lb. frozen broccoli
1 zucchini, roasted
Cook over low in crock pot for 1-2 hours until kale is cooked and broccoli is too. You can also bake for 30 minutes in a 350 degree oven.
1 serving is 1 and a half cups.
