Tasty Tilapia Tacos
These can be made in probably less than 20 minutes. They're a good recovery meal post workout or post-cookie binge to get you back on track.
thawed tilapia fillets (4 oz each, assume 1-2 tilapias per person)
1-2 cups roasted kale or raw lettuce
1/2 avocado per person
2 corn tacos per person
jar salsa (or fresh if you're an overachiever)
Rub for tilapia: 1 teaspoon each of the following, salt, pepper, dried onion, dried oregano
Preheat oven to 400 degrees, in a bowl rub kale with olive oil. Place on a baking sheet and sprinkle with salt.
On another baking sheet place tilapia fillets and rub with seasoning. Bake everything for 15 minutes.
Assemble on plates, chopped avocado, stuff taco shells with kale or lettuce top with fish and salsa.
Per 2 tacos with 1 piece of tilapia and 1/2 avocado
300 Calories, 20 g protein, 8 g fiber
