I hit up Costco (my new favorite place on earth) for a case of pumpkin, I got about 12 cans for $9 so you can believe it’s showing up in everything. It’s a great source of Vitamin A, is low Calorie, a great substitute for fat, pretty bland if you ask me so you can actually mix a can into a box of brownie mix for a virtually fat-free brownie, and it’s all over Pinterest.
Pumpkin Pie Latte Waffles
Serves 2
What you need:
Waffle Iron
Mixing bowl
Spoon
Ingredients
wet
½ dry oatmeal nuked in 1 cup of strong coffee for 1 minute in the microwave
3 egg whites
½ cup canned pumpkin
1 TBS pumpkin pie spice
1 tsp. vanilla extract
2 TBS Stevia or other non-calorie sweetener
dry
1-2 scoops protein powder (if it’s 100 Calories per scoop or one scoop for the 200 Calorie protein powders)
3 TBS pancake mix (regular, gluten-free, whatever) or sub. 3 TBS flour and 1 tsp. baking powder
Mix wet ingredients and stir in dry ingredients, fill waffle iron according to package directions. The batter can hang out in the fridge.
