Amaretto Apple Crisp Pancakes

I regret that the accountant ate these before I could snap a photo.  These came about after realizing that I needed to use up a lot of leftover apple crisp.

I made these higher in protein with the addition of protein powder and they serve two or one accountant.

Ingredients:

2/3 cup apple crisp (or nuke 2 apples with 1/4 cup dry oats and 1 TBS water and 1 TBS cinnamon for 4-5 minutes)
1/2 cup pancake mix
1 scoop vanilla protein powder
1/2 cup milk (or dairy free alternative) depending on your protein powder you might need a little more

Combine all ingredients and let sit for 5-10 minutes.  Heat a non-stick skillet over medium heat, drop pancakes by 1/4 cup and cook about 3 minutes on each side until bubbles form.

Serves 2
300 Calories, 18 g protein, 5 g Fiber, 31 g Carbs.
