Summer Skinny Sliders

Keep your abs for longer.

Faux Fried Zucchini
non-stick spray

1-2 zucchini cut in sliches uh, like a generous quarter of an inch.  Don't make them too thin.

1/4 cup Parmesan cheese or ground almond flour/meal if you're lactose intolerant
 1 cup panko bread crumbs
1 TBS sea salt
1 TBS pepper
2 tsp garlic powder

2 eggs beaten with 2 TBS milk (or water if you can't deal with the lactose)

You need:
3 bowls not bowels...

baking sheets lined with foil because it's annoying to wash that stuff

bowl one//mix
parmasean cheese, seasonings

bowl two//mix
eggs/milk

bowl three// mix
breadcrumbs/seasonings

Operation breading station sensation:
Take zucchini dredge in cheese seasoning, shake off excess, move onto egg mix, shake off excess (with enthusiasm!), and finish in the breadcrumbs.

Repeat.

Line up your zucchini soldiers on a baking sheet and roast for 20-30 minutes at 400 degrees, it really depends on the thickness of the cut.


Burger sliders
1 lb of grass fed beef
1 TBS salt
1/4 cup ground oats or whole wheat flour
1 egg
1 TBS turmeric (I just wanted its anti-inflammatory properties and stuff

Make patties with 3 TBS ground beef mix.  Bake with the zucchini to multi-task.

Top the zucchini slider with the beef and have at it.  

Try adding tomato sauce...tzatziki... using veggie burgers...
