Coco Zucchini Cupcakes

I'm typing this as the accountant is watching the Hall of Fame game.  Yes, football season is among us.  But so are the zucchini.  I dream of these little guys in December but when August gets here, I'm a bit sick of them.  They are versatile little creatures.

//ingredients
1 small zucchini grated
1/2 avocado (well mashed)
1/2 cup packed brown sugar
1 1/2 cups pancake mix
1/2 cup cocoa powder
2 scoops protein powder (I used Designer Whey Vanilla)

//now what//
Pre-heat oven to 350, line a muffin tin or spray with non-stick spray.  Set aside.
Cream together zucchini, avocado, and brown sugar. In another bowl, stir pancake mix and cocoa powder together.  Stir wet into dry ingredients.  Fill each cupcake 2/3 full. Bake for 25 minutes, let cool in pan and pop out.
