Sunday Funday: Phat Not Fat--French Toast

This isn't your typical hangover cure but it's the start on the road to recovery.  Vitamin C and polyphenols in the fruit salad on top replete those lost electrolytes you left in the bathroom while worshiping the porcelain gods.  The happy whole grain carbs in the bread boost serotonin so you go go from The Walking Dead to The Office faster (not that you want to go to work tomorrow).

Ingredients:
4 slices of whole wheat bread (I used Trader Joe's, 90 Calories per slice with 4 g protein and 6 g fiber)
4 egg whites
1 TBS vanilla whey protein powder
1/2 cup milk (I used coconut but whatever you have will be fine...or just add more egg whites)
1 TBS agave

Fruit Salad (formerly known as whatever is left in the house after your Saturday night antics):
Thawed frozen blueberries, raspberries, mangoes, and 1 banana, toss with 1 TBS agave and let hang out in a bowl while you make these bad boys.

Combine egg whites, protein powder, milk, and agave. Heat a skillet over medium high heat and spray with non-stick spray.  Soak each slice of bread in for 1 minute (30-45 seconds per side) and place in skillet for 3 minutes on each side.  Repeat.  Top with fruit salad, pour yourself a big mug of coffee and swear you'll never drink again...(which you're probably done on several occasions but we're not meant to judge here.)

Sobering Calories: 400 (includes 3/4 cup of fruit), 14 g protein, 14 g fiber.
