Chocolate Protein Truffles

Have you suffered from a recent le bad date?  Boss is on your case or has the management skills of a dictator? Don't get fat.  Get lean.

Here are my dark chocolate truffles, they are epic because you don't have to bake them...well, you don't really bake truffles anyway. You can substitue vanilla and make them into blondie balls (or smash them in a lined pan and make them into bars)

This will make about 8 truffles, each truffle is about 45 Calories, 4 g protein, 0.5 g fiber.

You'll need:

  • Chocolate protein powder (I like EAS), 1 scoop, (you can use vegan sources as well)
  • 1 TBS Hershey's Special Dark Cocoa
  • 2 TBS of almond butter
  • 1 tsp vanilla
  • 2-3 TBS liquid (this can be any form of milk)
  • 1/4 tsp salt
Mix the protein powder, cocoa.  Heat the almond butter, vanilla, and 2 TBS of liquid in a microwave safe bowl for about 30 seconds so they're easy to stir, tip the liquid into the protein powder mix and stir, the finishing texture will be roughly like a sugar cookie dough.  You might need an extra TBS of liquid in there, it depends really on the humidity.  If it's still loose, refrigerate or freeze for 10 minutes (you might need longer), scoop by TBS and roll, they can be dipped into cocoa powder or just put in the fridge to harden up.
