I wish I had a long story about this but I honestly decided to give quinoa another try. I currently prefer to just put it in stuff but the protein content makes me happy.
1 cup of corn meal
1 cup of cooked quinoa
1/4 cup sugar
1/2 cup milk (I used almond milk)
1 teaspoon of salt
1 teaspoon of pepper
Pre-heat oven to 350 degrees. Spray an 8" baking pan with non-stick spray and set aside.
Combine all ingredients in a bowl and put in greased baking pan.
Bake 30-45 minutes (my oven is on the fritz so it took me 45 minutes).
