Peanut Butter Cookies
Yes, that would be mail, a box to go back to Amazon, and crappy lighting because it gets dark at 5:30 p.m. I wanted to make black bean brownies but really didn't have black beans so it defeated the attempt (and I wasn't leaving the house to go to the store). I've had this can of cannellini beans for about 3 months and needed to make something out of them that wasn't going to be humus.
These bad boys will help you stick to whatever outrageous New Year's Resolutions you may have and rock about 6 g of protein so you stay full.
Ingredients:
1 can of white beans
1 medium sized banana
1 egg (can substitute flax egg)
1/4 cup vanilla whey protein powder (can use vegan protein powder)
2/3 cup peanut butter
1/4 cup white chocolate chips
1/4 cup sugar
Pre-heat oven to 350 degrees.
In a food processor, puree beans until a fine paste is achieved. Add remaining ingredients continuing to process and scrape sides as needed. Spray a muffin tin with non-stick spray and place about 1 heaping Tablespoon of batter (it might be more like two) and bake for 15 to 20 minutes.
