Butternut Squash Bake
This comes together in less than 20 minutes with minimal work. You can easily throw this in a pie shell with pecans or walnuts for a non-traditional pie, bake it in a casserole dish for a crisp top or just eat it as is.
1 package of fresh cauliflower (or frozen)
1 small butternut squash, seeded and chopped (leave skin on)
1/4 cup vegetable broth
1 Tablespoon butter or Earth Balance
2 Tablespoons brown sugar
1 teaspoon salt
1 teaspoon cinnamon
Microwave cauliflower according to package directions (fresh takes about 4-5 minutes). Microwave butternut squash for about 10-15 minutes until tender. Topple all ingredients into a high speed blender and blitz for 2-3 minutes on low until smooth (you might want to add more broth). You can also use a hand mixer or potato masher with a good side of aggression. From there it's good to go!
