
Well, we've made another day where the apocalypse hasn't ridden us of Mondays. Whatever. Anyway, it's a boot camp Wednesday which means I won't be able to walk properly until Friday.
I wanted to make peanut butter cookies, still be able to fit in my wedding dress, and also add chocolate to them so I can pawn them off on my coworkers. Needless to say they've enjoying my mental breakdowns and lack of a filter.
Peanut Butter Cookies with Chocolate Chips
Stuff You Need
Medium Sized Mixing Bowl
Wooden Spoon
Baking Sheet (spray with non-stick spray or use a silpat)
Ingredients
2 and 1/2 cups whole wheat pancake mix
1/2 cup peanut butter
1/4 cup brown sugar
1/2 cup chocolate chips (can use carob chips or nuts)
2-3 Tablespoons of milk (can sub non-dairy alternative)
Pre-heat oven to 400 degrees F. Combine all ingredients except for the milk, mixture should be crumbly, add enough liquid until it comes together like a biscuit mix, bake for 12 minutes and let cool on pan for about 5-8 minutes. Roll into balls about 2 Tablespoons worth, should make about 15 or 16.
