1 Pita (I used Trader Joe's whole wheat)
6 oz cooked chicken breast, shredded
1/2 cup tomato sauce (I made my own from tomatoes and chopped garlic cooked over medium heat for 30 minutes)
1.5 cups of kale rubbed with 2 tsp olive oil
3-4 shavings of Romano cheese
2 Tsp Parmasean chese
Pre-heat oven to 400 degrees, on a baking sheet assemble pita pizza, add: sauce, chicken, kale, cheese. Bake for 16 minutes. You can multiply this to feed a crowd.
400 Calories, 33 g protein, 12 g fiber. about 2.3 servings of carbohydrates.
