Let Them Beet Cake

I'm still trying to figure out what I'm going to do with a mess of beets (again) in this week's CSA bag.  Yes, beets can help you workout for longer, fight cancer, heart disease, and make your Bubba's borscht a lot better (you mean you never affectionately referred to your Ukrainian great-grandmother as Bubba?).  
Honestly, I'm pretty much hating on the taste of beets.  Kale took me a while to accept and I can puree that raw into stuff and tolerate it.  But beets are a bit too earthy and I need to take a page from the book of Jessica Seinfeld's Deceptively Delicious.


Find Me A Beat Chocolate Cake

1 box dark chocolate cake mix
1 egg or mashed banana to use as a binder
2 TBS oil, preferably olive oil
1 cup of beet puree (nuke skinned/chopped beets with 1/2 cup of water in a large microwave safe bowl for about 10 minutes, let cool and blitz in a blender), measure out the aforementioned amount
1/2 cup cocoa powder

Frosting:
Trader Joe's Whipped Topping, thawed (no creepy hydrogenated oils)
1/2 cup peanut or almond butter
Put thawed whipped topping in a large bowl.  In a small bowl with the peanut butter, stir a 1/2 cup of whipped topping into peanut butter vigorously.  Then fold PB into the whipped topping and use enough to frost or fill.

Mix all ingredients together for 2 minutes with a normal hand mixer, scrape sides as needed.  Pre-heat oven according to cake mix directions, I used two 9" pans and it came out great.  Let the cake cool and frost with above frosting.
