Suit Up. Phenomenal-No Added Sugar— Protein Bark

It’s summer which means no one wants to really turn the oven on.  

Rock on. 

It’s easy to slip into a sugar coma with a visit to the Dairy Queen or other high calorie ice cream joint (or maybe a pitcher of 600 Calorie frozen margaritas poolside, oh wait that was my Jamaica trip).  

You’ll also probably want to go to the pool, beach, or water park over the weekend but would like to leave your lower belly pouch at home.  This protein bark will satisfy the sweet tooth, save a few bucks, and also save a few lbs. while we’re at it.  It's also easier than Taylor Swift writing a song about a break-up. 


In a microwave save bowl, combine:
½ cup peanut butter or almond butter
1/3 cup dark chocolate chips (can make a vegan substitute with carob chips)
¼ cup cocoa powder (I like Trader Joe’s or Hershey’s Special Dark)
3 TBS coconut oil (unmelted)

1 scoop protein powder (I used Trader Joe’s Vanilla Whey)

1 TBS chia seeds
1 TBS flax seeds
2 TBS nuts (I used chopped walnuts)

Nuke for 1 to 1:30 seconds, gently stir in 1 scoop of protein powder.  In a small container (I used a glass Pyrex container, you can get creative and use muffin tin liners or whatever container you have around), line it with Saran wrap sprayed with nonstick spray.  Eloquently dump the chocolate base into the container (it makes great topper for ice cream or fondue if you like it warm). 

Add the chia seeds, flax seeds, and nuts to the top and freeze for 1 hr or longer. You gotta keep this in the fridge, it melts in your hand and your mouth (bad M&Ms pun I know!).

Makes 12 servings: 116 Calories, 4 g protein, 2 g fiber.
