Screw banana bread, this topping (or heck eat it alone) isn’t for the faint of heart. This one is a bit safer with no fires attached.
2-3 ripe bananas, chopped
2 tsp coconut oil
1 TBS sweetener (maple syrup, honey, agave, etc)
2-3 TBS rum
½ tsp cinnamon
Dash of nutmeg
Please note, if you only have one banana the ratio is one banana: ½ tsp coconut oil: 1 tsp sweetener: 1 TBS liquor: Dash nutmeg/cinnamon
· Combine oil, syrup, booze, seasonings over medium heat, please be careful if you have a gas range, then you will have flames. Let it come to a boil and toss in bananas, you can cook this as long as you wish but 3-5 minutes at this point is standard.
· Suggestions: topping for ice cream, breakfast foods (pancakes, waffles, oatmeal, French Toast), puree and put on toast with peanut butter. Can also add flax or chia seeds to boost protein. Let cool and layer with whipped topping and walnuts.
