These 72 Calorie bites are grade school blast from the past. I had little knowledge of the mystical no bakes growing up in Southwestern Pennsylvania until bake sale season. Luckily, this was a time in my life when I had a metabolism. Fortunately, this dairy free version of a childhood favorite can furthermore reign on.
· 1/3 cup almond butter
· ¼ cup coconut oil melted (or Earth Balance spread)
· 3 TBS cocoa powder
· ½ tsp salt
· 1/3 cup sugar
· 2 cups oats (can substitute 2 cups of quinoa to consider this paleo or another cereal on hand)
In a medium sized pan over low heat melt almond butter to sugar until combined. Stir in oats until coated and drop by 1 TBS onto a baking sheet lined with wax paper and refrigerate for 20 minutes or until hardened. Keep cool until serving, if they warm up they make a great topping to coconut milk ice cream.
