
1 cup corn meal
1 cup of buttermilk or 1 cup of regular milk with 1 TBS lemon juice
1 tsp baking soda
1 TBS oil (coconut, olive, or melted butter)
1 tsp salt and pepper
1 egg white (or egg substitute)
Preheat oven to 400 degrees, spray a 9” baking pan with non-stick spray. Mix all ingredients in a bowl, slip into pan and bake for 20-30 minutes.
