These lie somewhere in between a biscuit and a cookie, biscuit sounds healthier but cookie grabs your attention. Biscuits weren't given up for Lent but cookies were so you get my drift.
- 1.5 cups of whole wheat pancake mix
- 1/2 cup of oats
- 1 egg and 1 white
- 1/3 cup almond butter
- 1 TBS coconut oil melted (or butter or oil, etc)
- 1/4 to 1/2 cup some sort of milk
- 1 disgustingly high on the cacao % chocolate bar chopped (I used one that is 83%)
Preheat an oven to 375. Combine the first 2 ingredients with the remaining 5. Drop by tablespoonfuls on a non-stick baking sheet and let them ride it out for 10 minutes (might take 12 depending on the oven).
Makes 20 (ish).
