Awesome Almond Butter Blondie Biscuit



These lie somewhere in between a biscuit and a cookie, biscuit sounds healthier but cookie grabs your attention.  Biscuits weren't given up for Lent but cookies were so you get my drift.

  • 1.5 cups of whole wheat pancake mix
  • 1/2 cup of oats
  • 1 egg and 1 white
  • 1/3 cup almond butter
  • 1 TBS coconut oil melted (or butter or oil, etc)
  • 1/4 to 1/2 cup some sort of milk
  • 1 disgustingly high on the cacao % chocolate bar chopped (I used one that is 83%)
Preheat an oven to 375. Combine the first 2 ingredients with the remaining 5.  Drop by tablespoonfuls on a non-stick baking sheet and let them ride it out for 10 minutes (might take 12 depending on the oven).

Makes 20 (ish).

Nutrition Business: 110 Calories per cookie, 2 g fiber, 3 g protein, 8 g carbs.  

Yes, those with Diabetes can eat like 2 and it would be about a serving of carbs (15 g = 1 serving)
