Good morning! Here's my AM recipe for oatcakes modified from me reading 4 different blogs on the matter:
Oatmeal Chia Pancakes
-1/2 C oatmeal (I use Trader Joe's)
-2 T whole wheat flour
-1 T Chia Seeds
-1 T egg whites
-1/4 t baking powder
-1/2 to 2/3 C milk (almond, dairy, hemp, whatever you like)
-cinnamon (to taste), I used pumpkin pie spice
-1 T sweetener (maple syrup, agave, sugar, or honey)
Combine all ingredients except the baking powder (add just 1/2 cup milk), let sit in the fridge overnight, add an additional 2 TBS milk and the baking powder, cook on medium low heat for 3-4 minutes per side.
