Weekly Recipe, Couscous Cakes with Thai Cashews
Makes 6, serves 2-3
- 1 cup whole wheat couscous, prepared
- 1/4 cup smashed white beans (or chickpeas)
- 2 TBS ground flax seed
- 3 TBS pesto
- non-stick cooking spray
- Trader Joe's Spicy Lime Thai Cashews
- Marinara sauce (if desired)
Spray a pan with non-stick spray and heat over medium high heat. Combine first four ingredients and shape into 6 cakes. Cook on each side for 3 minutes. Spoon 1/4 cup tomato sauce on plate, add couscous cakes, and cashews. Eat!
