Brunch Quiche and A Poem

Ever since I got a membership to Costco, I've been buying random stuff in bulk.  It's been beneficial in also feeding the accountant I married (who also happens to be a budding racquetball star in the courts), anyway, we had 16 eggs that were going to expire in the next two days which is where this quiche came about.

Also, I wanted to make the use of everything in the kitchen since our weather is basically this.  If you're wondering Columbus is the county left of Zanesville in purple.  Purple is not a good color in regards to weather.

Ingredients

16 eggs (4 whole eggs and the rest whites)
12 oz package of frozen peppers (I used Trader Joe's blend with onions)
4 chopped garlic cloves
1/2 teaspoon red pepper flakes

Topping
1/2 cup crushed tortilla chips
1/2 cup fat-free shredded mozzarella

Method:
Pre-heat an oven to 350 degrees, spray a 9" round pan (or pie plate) with non-stick spray.  In a large bowl, separate eggs and add in frozen peppers, garlic, and red pepper flakes.
Bake for 70 minutes.

Serves 8: 134 Calories, 12 g protein, 1.2 g fiber
