With the elevated electric bills, I have no desire to turn on an oven or stove. I pulled this recipe with a wink and a nod to the skinny 7 layer dip. Just add lemonade or a light beer.
Serves two for a light dinner or take as a dip:
· 1 avocado chopped
· 2 tomatoes chopped/ seeds removed
· ½ beans (black or cannellini)
· ¼ cup salsa
· Fresh Mozzarella (or goat cheese), ½ cup cubed
· 2 TBS fresh herbs chopped
· 1 TBS olive oil
Layer beans, avocado, tomato, olive oil, cheese, salsa. Serve with chips.
Serving size ½ of container for meal: 300 Calories, 18 g protein, 10.6 g fiber
