Not Pot Protein Brownies



I was completely against the whole putting a can of mashed beans in dessert until I realized it takes exactly the same.  They’re special brownies in a legal way.  Cheap.  Filling.  And a low chance of going Lindsay Lohan on these bad boys (i.e. hard to binge on).  They’re awesomely low on sugar.  Won’t kill your diabetic grandmother off or induce a sense of guilt greater than a Michael Vick apology. 

1 can of chick peas rinsed and pureed (with a zip lock bag/rolling pin or food processor)
½ cup cocoa powder
1/3 cup sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
½ cup peanut butter or almond butter
¼ cup mini-chocolate chips
*optional: 1 packet of instant coffee
1 egg of egg substitute

Frosting:
¼ cup softened butter or Earth Balance stick
3 TBS peanut butter
1 scoop protein powder (vanilla or chocolate)

Pre-heat oven to 350 degrees, line a 9” square baking pan (I hate washing dishes).  Basically dump everything into a mixing bowl and blend.  You can overbeat all you like, there’s no gluten to develop.  If you have your life together you can make the entire thing in a food processor.  Who wants to grow up?
