Pretty Easy Pasta Recipe

The breaking of the diet.

It's been six long weeks since I've been back to Pennsylvania.  The land were people will mostly hang out in a stopped position at a red light.  Red lights are optional in Columbus, Ohio as many the pedestrian, dead cat, and wrecked call will tell you.  So I needed a happy bowl of pasta to get me through the last week until I went back home.


What you need:
One box of whole wheat pasta
1 package of frozen spinach
2 jars of marinara sauce
1 bag of frozen peppers
3 TBS pesto

And then....boil pasta according to package directions, in a separate skillet, heat over medium high and spray with non-stick spray add in: spinach and peppers, cook and add sauce and pesto... instead of draining the pasta, use tongs and just throw in into the sauce and let the additional pasta water cook down.  Voila.  Practically fat free.

Per 3/4 cup serving: 250 Calories, 5 g protein, 8 g fiber.
