Fat Kid Food: Nacho Problem

Ah, Tex-Mex goodness. 
I decided after an 8 mile run I needed something kind of bad as a reward which is the inspiration behind these tasty guys.

Ingredients
Non-stick spray
1 lb of 90/10 ground beef (or soy crumbles if you're vegetarian, or go 50/50 with meat and soy crumbles)
1 packet of taco seasoning
1/2 cup low fat pepper jack cheese
1 container of fresh salsa
1 container of guacamole
1 bag of baked nachos (look for a serving of 10-14 chips with less than 150 Calories)
low-fat sour cream for garnish
extra tomatoes if desired

Spray a pan with non-stick spray and heat over medium high.
Brown meat in a pan, drain or spoon off any excess fat and add the taco seasoning.
Preheat your broiler while this is going on line a 9x13" pan with foil and spray with non-stick (no clean up for this). Top with chips and ground beef and cheese and STAY BY YOUR OVEN broil for 5-8 minutes depending on your oven.

Top with fresh salsa, guac, and sour cream as desired.

To make one serving:
10-14 tortilla chips (read the label for 1 serving) ~150 Calories
1/2 cup ground beef with taco seasoning ~150 Calories/20 g protein

2 TBS cheese ~50 Calories
2 TBS guacamole ~60 Calories
Fresh salsa, pretty much a free food here
1 TBS sour cream (low fat on all the dairy here people) ~30 Calories
~440 Calories, 26 g Protein, 6 g fiber
