Sweet potatoes are cheap, good for you, and pretty versatile.  I've been messing around on Spark Recipes because they have a nutrition calculator.  Let the sweet potato roast while watching 30 Rock.





Ingredients


    1 sweet potato
    2 oz almond milk
    5 cashews
    2 tsp pumpkin seeds
    1 tsp cumin
    1 TBS tumeric
    salt and pepper


Directions

Bake sweet potato at 350 degrees for 40 minutes or until tender. Mash in a bowl, add 1 tsp cumin, 1 TBS tumeric, dash of salt and pepper, 1 tsp butter. Garnish with nuts and seeds.
