On the mend...

This weekend took an interesting turn for the worst and I don't mean the first two quarters of the Steelers-Ravens AFC Divisional Playoff match-up.  I can't remember if it was the Ravens touchdown by Cory Redding that elicited the initiation of my 24 hour flu virus or the popcorn that was my dinner that night.

Anyway, I figured a pot of soup was necessary since there will be no Monday Night Football for many months.


Inverno Minestra  (Italian for winter soup) 


Ingredients:
1 lb sweet potato
1 lb onion
3 TBS olive oil
1 TBS each of dried basil, oregano, garlic, pepper
1 tsp cumin, red pepper flakes
1/4 cup pesto
1-16 oz can of chick peas or other white beans
1 cup Boca Soy Crumbles
32 oz chicken broth


Cube sweet potatoes and onions about the size of a nickel on a 9x13" pan. Roast at 375 degrees for 30-40 minutes.



Add the remaining ingredients and bring to a boil for 2 minutes and simmer for 15 minutes.  Enjoy.  Makes 8 generous servings: 180 Calories, 8 g protein, 5 g fiber.
