Super Bowl Party Survival

Well, if you're still keeping your New Year's weight loss resolution this may be your first big test...the Super Bowl party.

Wings, ranch, cake, chips...guac! It doesn't help that you have four quarters plus a wardrobe malfunction or two during the half time show...(who knows what the Boss may do) to just sit there and snack.

Here are a few recipes/tips to lighten up what can be an afternoon spent on the treadmill.

If you're hosting a party here are a few options to lighten up a few key areas:

We'll start with dessert.

Try this take on cupcakes that I'm pretty sure is a Mid-Western confection (when I was living in DC no one but my Michigan native coworker had heard of this).

Diet Coke Cupcakes Recipe
Frost my low-cal icing:
1 package instant sugar free vanilla pudding mix
1 container sugar free/ fat free whipped topping (thawed)
1 to 2 tsp vanilla extract

Combine all ingredients and frost cooled cupcakes.

You can add a 1/2 cup of creamy peanut butter if you're looking for more substance (this will add some calories though).


Next try Paula Deen's Magical Peanut Butter Cookies, this is one of the few desserts she's made w/o butter.


Now on to the snacks/dishes:

I'd get or assemble a try of fruit and veggies, the best low-fat veggie dip I've ever had is T. Marzetti's Light Ranch Dip, look for it in the refrigerated section of the produce department (it's great on salads, wings...etc.)

Lastly, get a few of the regulars, order or bake a frozen pizza, pick up some wings or chicken, and stock the fridge with regular and diet colas and light beer or regular so everyone has options!
