Wall Street got you down? Eat Cake!

Coping with the bailout.

To avoid your own inflation, this easy recipe hails from the Weight Watchers realm with a few of my own twists:

Ingredients:

Cake

1 box angel food cake mix
28 oz of crushed pineapple in as little syrup as you can find
1 capful of vanilla flavoring

Frosting

1 container of sugar-free/fat-free whipped topping thawed
1 package of sugar free instant vanilla pudding

Directions:

Pre-heat the oven to 350 degrees. Spray two 8 inch pans with non-stick spray (I love the new Pam High Heat Cooking). Dump the angel food cake mix and pineapple in a bowl and mix by hand till combined, pour into pans and bake for 35-40 minutes until a toothpick or knife comes out clean.

Take the cakes out and them 'em cool.

To make the frosting (this isn't rocket science), add the pudding mix to the thawed whipped topping and stir. It'll be nice and thick, if you want something thinner add a few tablespoons of milk.

Place one layer of cake on a plate or platter and add some frosting on top, add the second layer and ice the cake with the remaining "frosting".

Enjoy a big fat slice while events unfold :-)
